Garlic Butter Lobster
Sweet lobster halves roasted with garlic butter, lemon, and parsley. A premium centrepiece that stays simple enough for a weeknight treat.

- 1 live spiny lobster, 700g-900g
- 4 tbsp unsalted butter, softened
- 4 cloves garlic, finely minced
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp parsley, chopped
- Salt and black pepper to taste
- Lemon wedges to serve

Chill the lobster briefly, then split it lengthwise with a sharp knife.

Remove the vein and rinse lightly under cold water. Pat dry.

Mix butter, garlic, lemon juice, lemon zest, parsley, salt, and black pepper.

Brush the garlic butter generously over the lobster flesh.

Roast or grill flesh-side up for 10-12 minutes, until opaque and just firm.

Spoon over the pan juices and serve immediately with lemon wedges.
Chef's Tips
Do not overcook lobster; pull it once the flesh turns opaque and just firm. Add the last spoon of butter after cooking for a glossy finish.
