Pan-Seared Salmon Teriyaki

- 2 salmon fillets (250g each)
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp honey
- 1 tsp grated ginger
- Spring onions to garnish

Sear skin-side down in a hot pan until crisp, then flip.

Chef's Tips
Don't move the salmon while the skin crisps — let it release naturally.
